I feel like I'm constantly baking muffins, and they seem to disappear pretty quick once I've made them! My mom is a constant muffin baker as well, so maybe it's an inherited trait :)


I'm always getting questions about my muffin recipe, so here it is. 


2 cups flour (I use whole spelt)

1 tsp baking soda

1 tsp cinnamon

3/4 cup sugar

2 eggs

1/2 cup oil (I use olive or avocado oil)

3/4 cup yoghurt or sour cream or milk or almond milk (or combination of any of these)

1 tsp vanilla

1 tsp apple cider vinegar

1/2 cup nuts (you can use any kind of nuts, I usually use pecans or almonds)

1/2 cup berries or diced fruit (usually frozen blueberries over here but it depends on the season)


pre-heat the oven to 400 degrees F. Then sift the dry ingredients together. Add the eggs, oil, yoghurt, vanilla, ACV and then mix well. Add nuts and fruit last. Spoon the mixture into muffin tins (or silicon muffin cups which are my new favourite), filling each about 4/5 of the way (muffins will rise a bit). Bake at 400 for 15-20 minutes. The muffins will be browned on top when finished. If you're unsure then use a bamboo poker to check (it should come out with a few crumbs on it or totally clean when the muffins are done).
